About the Switchel
Switchel was drunk by farm workers in colonial New England during the hay harvest, which is why it is also called haymaker's punch.
The shrub family. Shrubs are drinking vinegars. Before refrigeration, fruit was preserved with vinegar and sugar, and in colonial America the syrup was mixed with water as a refreshing drink. Switchel, with vinegar, ginger and maple, was drunk by farm workers at haying time. The tang does the job of citrus.
